Ingredients

  • 0.1 teaspoon pepper black
  • 0.5 cup celery sliced
  • cups rice long-grain hot cooked
  • tablespoons roasted peanuts chopped
  • tablespoons basil fresh minced
  •  garlic clove minced
  • 0.3 cup spring onion thinly sliced
  • tablespoons lite coconut milk light
  • tablespoons juice of lime fresh
  • 2.3 pounds mussels scrubbed
  • teaspoons olive oil 
  • cup peas green frozen thawed
  • 0.3 teaspoon hot sauce hot
  • tablespoons curry paste red
  • 0.3 teaspoon salt 
  • 1.5 cups water 
  • 0.3 cup water chestnuts drained sliced chopped

Directions

  1. Bring water to a boil in a large Dutch oven.
  2. Add mussels; cover and cook 3 minutes or until shells open.
  3. Remove from heat, and discard any unopened shells. Cool mussels.
  4. Remove meat from shells, and discard shells.
  5. Combine meat and lime juice in a bowl; set aside.
  6. Heat oil in a large nonstick skillet over medium heat.
  7. Add garlic; saut 1 minute. Stir in curry paste; saut 1 minute. Stir in rice and next 5 ingredients (rice through milk); cook 2 minutes or until thoroughly heated. Stir in peanuts, basil, salt, pepper sauce, and black pepper.
  8. Place 1 1/2 cups rice mixture on each of 4 plates; top with 1/2 cup mussels.
  9. Garnish with lime wedges, if desired.
