Ingredients

  • 0.5 teaspoon curry powder 
  • 0.3 cup less-sodium chicken broth fat-free
  • teaspoon honey 
  • tablespoons juice of lime fresh
  • 0.5 cup mangos diced peeled ()
  • teaspoons olive oil 
  • 16 ounce loin pork chops boneless ( 1/)
  • 0.1 teaspoon salt 
  • 0.5 teaspoon salt

Directions

  1. Combine first 7 ingredients in a food processor; process until smooth. Strain mixture through a sieve into a small bowl; discard solids. Set mango sauce aside.
  2. Sprinkle chops with 1/2 teaspoon salt and 1/2 teaspoon curry powder.
  3. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  4. Add chops to pan; cook 3 minutes on each side or until done.
  5. Serve chops with mango sauce.
  6. Note: To speed up the straining process, use a rubber spatula to press the mango mixture through the sieve.
