Ingredients

  • 1.5 pounds boneless pork loin boneless cut into 1-inch cubes
  • teaspoon canola oil 
  • 0.5 cup coconut milk 
  • cups basmati rice hot cooked
  • teaspoon curry powder 
  • tablespoons flour all-purpose
  • tablespoon ginger fresh minced peeled
  •  garlic cloves minced
  • teaspoon ground cumin 
  • 0.3 cup lower sodium beef broth fat-free
  • cup onion chopped
  • cup red bell pepper red chopped
  • 3.5 cups potatoes - remove skin red cubed
  • 1.5 teaspoons salt 
  • tablespoon sugar 
  • tablespoons tomato paste

Directions

  1. Heat a large skillet.
  2. Add oil to pan; swirl to coat.
  3. Add pork; cook 4 minutes, browning on all sides.
  4. Combine potato and next 11 ingredients (through garlic) in an electric slow cooker; stir well to dissolve flour. Cover and cook on LOW for 6 to 8 hours or until pork and potatoes are tender. Stir in coconut milk.
  5. Serve pork over rice.
  6. Garnish each serving with a cilantro sprig, if desired.
