  • 0.5 cup carrots grated
  • 0.8 tsp curry powder 
  • cup onion chopped
  • cup quinoa rinsed toasted
  • 0.5 cup raisins 
  • oz planters slivered almonds lightly toasted
  • 14 oz vegetable broth canned

Directions

  1. Melt butter in large saucepan on medium-high heat.
  2. Add onion; cook and stir 4 minutes or until onion is tender.
  3. Add broth, quinoa, raisins and curry powder; stir. Bring to boil. Reduce heat to medium-low; simmer 20 minutes or until broth is absorbed.
  4. Stir in carrots and almonds; cover.
  5. Let stand 5 minutes before serving.
