  • 0.3 teaspoon ground cinnamon 
  • 0.5 teaspoon ground cumin 
  • teaspoons juice of lime fresh
  • 0.8 cup skim milk 
  • 0.5 small onion diced
  • 0.5 cup yogurt plain
  • 0.5 teaspoon curry paste red to taste
  • servings salt and pepper black
  • 10 ounces sweet potatoes and into unpeeled cut into small dice
  •  frangelico warmed

Directions

  1. Coat a medium nonstick skillet with cooking spray; place over medium-low heat.
  2. Add the onion; cook for 2 minutes, until softened, stirring.
  3. Add the curry paste, cumin, and cinnamon; cook for 30 seconds, stirring to dissolved the paste.
  4. Add the sweet potato; cook for 2 minutes, stirring to coat.
  5. Pour in the milk. Simmer for 12 minutes, until the sweet potato is tender, stirring often and adding more milk if the mixture dries out.
  6. Transfer to a food processor or blender.
  7. Add the yogurt and lime juice; process until smooth. Season with salt and pepper.
  8. Serve with the warm bread.
