  • slices stale/dry dairy-free bread gluten-free cubed (, if needed)
  • 0.5 cup raisins 
  • cups dairy-free milk beverage unsweetened divided (see Milk Beverage Note below)
  • cup sugar 
  •  eggs beaten
  • teaspoon vanilla extract 
  • 0.3 teaspoon ground cinnamon 
  • 0.1 teaspoon ground ginger 
  • 0.1 teaspoon ground allspice 
  • 0.1 teaspoon ground cloves 
  • pinch salt

Directions

  1. Grease a 2-quart (like an 11x7-inch) baking dish.
  2. Add the bread cubes and raisins, toss together, and spread in an even layer.
  3. In a large mixing bowl, beat together the 2 cups milk beverage, eggs, sugar, and vanilla until the sugar is dissolve.
  4. Add the remaining 2 cups milk beverage, cinnamon, ginger, allspice, cloves, and salt, and mix on low just until combined.
  5. Pour the egg mixture over the bread cubes.
  6. Let it sit and soak for about 30 minutes, and then preheat your oven to 350°F.
  7. Bake the dairy-free bread pudding for about 30 to 40 minutes, or until set and golden brown.
