Ingredients

  • 1.5 cups pineapple fresh with juice (can sub canned in a pinch) crushed
  • cup dairy-free coconut milk beverage unsweetened
  • cup dairy-free creamer plain (Dione used So Delicious Original Coconut Creamer)
  • cup full fat coconut cream 
  • cup agave nectar raw blue
  • tablespoons juice of lemon fresh (for brightness)
  • 0.5 cup coconut flakes unsweetened fine

Equipment

  • food processor
  • bowl
  • blender
  • ice cream machine

Directions

  1. In a food processor or blender, crush the fresh or canned pineapple.
  2. Remove it to a bowl.
  3. Put the milk beverage, creamer, coconut cream, agave, and lemon juice in your food processor or blender and process until smooth.
  4. Add the crushed pineapple and just pulse to combine.
  5. Transfer the mixture into an ice cream maker, add the coconut flakes, and freeze according to your ice cream makers instructions.
  6. Enjoy as soft serve, or pack the ice cream into a container, and place it in the freezer for 4 hours or more. This will harden it for scooping.
