Ingredients

  • 0.5  chicken stock see 
  • tablespoon chili sauce 
  • 0.8 pound noodles cooked
  • tablespoons garlic chopped
  • tablespoons ginger grated
  •  green onions sliced
  • pound ground pork 
  • tablespoon oil 
  • teaspoon sichuan peppercorns toasted
  • tablespoon chinkiang rice vinegar black
  • tablespoon shaoxing rice wine dry
  • tablespoons tianjin preserved vegetables 
  • tablespoon sesame oil 
  • tablespoons sesame paste (or tahini or peanut butter)
  • tablespoons soya sauce 
  • tablespoon sugar

Directions

  1. Cook the pork in a large pan over medium heat hitting it with a splash of rice wine, about 10 minutes and set aside.
  2. Heat the oil in the pan over medium heat, add the garlic and ginger and saute until fragrant, about a minute.
  3. Add the sesame paste, soy sauce, black rice vinegar, sesame oil, sugar, chili oil and Sichuan peppercorns and mix until smooth, about a minute.
  4. Add the pork, preserved vegetables and broth and simmer for 3 minutes.Divide the noodles between 4 bowls, top with the sauce, garnish with green onions and a side of cucumber and enjoy!
