  • 0.5 cup butter softened
  • cups rice cereal crisp
  • 10 ounce dates chopped
  • large eggs lightly beaten
  • cup pecans toasted chopped
  • 48 servings powdered sugar 
  • cup sugar 
  • teaspoon vanilla extract

Directions

  1. Combine first 4 ingredients in a saucepan; cook over low heat 6 to 8 minutes, stirring constantly, until sugar dissolves.
  2. Add pecans, and cook, stirring constantly, 10 minutes.
  3. Remove from heat, and stir in vanilla. Stir in cereal, and cool slightly.
  4. Shape mixture into 1 1/2-inch balls; roll in powdered sugar.
