Ingredients

  • cup brown sugar packed
  • tablespoon butter 
  • cup coconut or shredded
  • cup dates pitted chopped
  •  egg white 
  • cup walnuts chopped
  • teaspoon water 

Equipment

  • sauce pan
  • oven

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  2. In a small saucepan over low heat, combine butter, water, and dates. Bring to a boil, then remove from heat, and let stand for 10 minutes.
  3. Pour date mixture into a medium bowl.
  4. Mix in the brown sugar and chopped nuts.
  5. Whip egg whites in a small bowl until stiff. Fold egg whites into date mixture.
  6. Roll dough into 2 inch balls and roll in shredded coconut.
  7. Place on cookie sheets about 2 inches apart
  8. Bake for 12 to 15 minutes in the preheated oven.
  9. Let cool on wire racks.
