Ingredients

  • 0.8 teaspoon baking soda 
  • 0.3 cup dates pitted chopped
  •  eggs 
  • 1.3 cups flour all-purpose
  • 0.3 cup butter softened
  • 0.3 cup pecans toasted finely chopped
  • 0.8 cup sugar 
  • teaspoon vanilla extract 
  • 0.3 cup cornmeal yellow

Directions

  1. Cream sugar and margarine at medium speed of a mixer until fluffy (about 3 minutes).
  2. Add vanilla and egg; beat well.
  3. Combine flour, cornmeal, and baking soda; stir.
  4. Add to creamed mixture; beat well. Stir in pecans and dates.
  5. Drop dough by level tablespoons onto baking sheets coated with cooking spray.
  6. Bake at 350 for 10 minutes; let cool on pans 2 minutes.
  7. Remove from pans; let cool completely on wire racks.
