  •  cucumber peeled cut into strips
  • ounce feta cheese crumbled
  • slices bell pepper green
  • head lettuce shredded
  • pound shrimp fresh unpeeled
  • 0.5 cup kalamata olives pitted
  • 0.5 cup olive oil 
  • teaspoon oregano fresh chopped
  • 14  pickled beets sliced
  • servings potato salad 
  • 0.5 cup red wine vinegar 
  • head the of 1 cos lettuce 
  • quart water boiling

    1. Cook shrimp in 1 quart boiling water 3 to 5 minutes or just until shrimp turn pink; drain. Rinse with cold water, and drain. Peel shrimp, leaving tails on; devein, if desired.
    2. Line a large platter with romaine lettuce leaves. Mound Greek Potato Salad in center. Arrange shrimp, iceberg lettuce, beets, cucumber, and, if desired, tomato around potato salad.
    3. Sprinkle with olives and feta cheese. Top with bell pepper slices, and, if desired, anchovies; sprinkle with oregano.
    4. Drizzle with vinegar and oil just before serving.
