Ingredients

  • 0.5 pound finely-chopped ham cubed cooked
  • 10 servings rice hot cooked
  • 0.5 teaspoon thyme dried
  • cup parsley fresh chopped
  •  garlic clove pressed
  • bunch spring onion chopped
  • 0.1 teaspoon ground pepper red
  • teaspoon pepper black
  • 0.3 teaspoon hot sauce 
  • tablespoons olive oil 
  • 0.5 teaspoon oregano dried
  • pound kidney beans dried red
  • teaspoon salt 
  • 1.5 pounds andouille smoked sliced
  • 0.5 teaspoon sugar 
  • large onion sweet chopped
  • cups water 
  • tablespoon worcestershire sauce

Directions

  1. Place beans in a large Dutch oven. Cover with water 2 inches above beans; soak 8 hours.
  2. Drain.
  3. Bring beans, 6 cups water, sausage, and ham to a boil in a Dutch oven. Cover, reduce heat, and simmer 3 hours.
  4. Saut onion and garlic in hot oil in a large skillet until tender.
  5. Add to bean mixture. Stir in green onions and next 9 ingredients. Cover and chill 8 hours.
  6. Bring bean mixture to a simmer; cover and cook, stirring often, 1 hour.
  7. Serve over rice.
