Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • tablespoon dijon mustard 
  • large eggs 
  • tablespoon chives fresh chopped
  • teaspoons optional: dill fresh minced
  • teaspoons tarragon fresh minced
  • tablespoons mayonnaise reduced-fat
  • ounces salmon finely chopped
  • 0.3 cup cream fat-free sour

Directions

  1. Place eggs in a large saucepan. Cover with cool water to 1 inch above eggs; bring just to a rolling boil.
  2. Remove from heat; cover and let stand 15 minutes.
  3. Drain and rinse with cold running water until cool.
  4. Peel eggs; cut in half lengthwise.
  5. Place yolks in a medium bowl; mash with a fork until smooth.
  6. Add sour cream and next 7 ingredients (through salmon); stir well. Spoon mixture into egg white halves (about 1 tablespoon in each half).
  7. Garnish with dill and tarragon sprigs, if desired.
