  • 0.3 teaspoon pepper black freshly ground
  • 0.5 cup cooking wine dry red
  • 24 ounce duck breast halves boneless
  • teaspoons ginger fresh grated peeled
  • tablespoon rosemary fresh chopped
  • teaspoons olive oil 
  • tablespoons raspberry vinegar 
  • 0.3 teaspoon salt 
  • 0.1 teaspoon sugar 
  • 0.5 cup cherries dried sweet

Directions

  1. Combine first 6 ingredients, and set aside.
  2. Heat oil in a large nonstick skillet over medium-high heat.
  3. Sprinkle both sides of duck with salt and pepper.
  4. Add duck to pan, and cook 3 minutes on each side or until a thermometer inserted into thickest portion registers 17
  5. Place duck on a cutting board; cover with foil.
  6. Add cherry mixture to pan; cook over medium-low heat 5 minutes.
  7. Remove from heat.
  8. Cut duck into thin slices; spoon cherry mixture over duck.
  9. Garnish with rosemary sprigs, if desired.
