Ingredients

  • teaspoons kosher salt 
  • 0.3 cup cilantro leaves fresh coarsely chopped
  • tablespoon garam masala 
  • large garlic clove pressed
  • tablespoons olive oil extra virgin extra-virgin
  • small onion cut into 1/4-inch-thick slices
  • pound roasting chickens cut into 8 pieces, backbone removed
  • cup yogurt plain

Directions

  1. Mix yogurt, chopped cilantro, olive oil,garam masala, salt, and garlic in 13x9x2-inch glass baking dish.
  2. Add chicken tomarinade, 1 piece at a time, coating allsides. Cover with plastic wrap; refrigerateat least 2 hours. DO AHEAD: Can be made 1day ahead. Keep refrigerated.
  3. Position racks in top third and bottomthird of oven; preheat to 400°F. Arrangeonions in thin layer on large rimmed bakingsheet to form bed for chicken. Top withchicken pieces in single layer, spacing apartfor even roasting (chicken will still be coatedwith marinade). Discard remaining marinade.
  4. Roast chicken on top rack until cookedthrough and juices run clear when thickestportion of thigh is pierced with knife, about1 hour.
  5. Serve chicken atop onion slices.Spoon pan juices around.
