Ingredients

  • pound chicken breast boneless skinless sliced into short strips
  • servings salt 
  • tablespoon sesame oil dark
  • tablespoon vegetable oil; peanut oil preferred 
  • 0.5 teaspoon pepper flakes red
  • head napa cabbage thinly sliced
  • 0.5  bell pepper sweet thinly sliced
  •  scallions sliced
  •  carrots julienned
  • 0.5 cup cilantro leaves loosely packed chopped
  • 0.5 cup roasted peanuts 
  • servings chow mein noodles to taste
  • tablespoon soya sauce gluten-free for option (use soy sauce )
  • tablespoons unseasoned rice vinegar 
  • teaspoon ground mustard 
  • teaspoon ginger fresh grated
  • clove garlic minced
  • 0.5 teaspoon chili pepper flakes 
  • teaspoons sugar 
  • 0.3 cup canola oil

Directions

  1. Sauté the chicken:
  2. Heat both oils over high heat in a large sauté pan for 1 minute, then add the red pepper flakes and cook for 30 seconds.
  3. Pat dry the chicken strips, sprinkle them with a little salt, and add them to the pan. Stir-fry the chicken over high heat until cooked through, 3-6 minutes depending on how hot your burner gets.
  4. Remove and set aside to cool.
