Imagine transforming a simple box of gelatin into whimsical, miniature snails that are as delightful to watch as they are delicious to eat. These Easy Marshmallow Snails are the perfect centerpiece for a fun family gathering, a quirky office party, or a playful kids' birthday celebration. With a health score of 53 and a mere 105 calories per serving, they offer a guilt-free treat that feels indulgent without weighing you down. Best of all, this delightful side dish is naturally gluten-free and dairy-free, making it an inclusive option for everyone at your table, while also adhering to a low FODMAP diet for those with sensitive stomachs.

What makes these snails truly special is their clever construction. By combining warm water with your favorite gelatin flavor and a generous amount of Jet-Puffed miniature marshmallows, you create a chewy, sweet spiral base that sets firmly in the refrigerator. The magic happens during the decoration phase, where you unroll each strip and place a reserved marshmallow on top to form the snail's body. Adding two tiny pieces of red string licorice as antennae brings the character to life instantly. The process is incredibly straightforward, requiring just a bowl, a microwave, and a whisk to execute in under an hour.

As a cooking enthusiast, I love recipes that spark joy and conversation, and this one definitely delivers. The vibrant colors of the gelatin contrast beautifully with the white marshmallows and red licorice, creating a visually stunning dessert that looks like it came from a professional bakery. Whether you choose a fruity or classic gelatin flavor, the result is a playful treat that everyone will adore. Serve them chilled on a platter, and watch as guests delight in picking up these adorable, bite-sized creations. It is a simple yet creative way to elevate any snack time into a memorable culinary experience.

Ingredients

  • pkg jell-o gelatin (4-serving size)
  • 1.8 cups marshmallows jet-puffed miniature divided
  • 24 pieces string licorice red (1 in.)
  • 0.3 cup ready-to-spread vanilla frosting
  • 0.5 cup warm water

Equipment

  • bowl
  • frying pan
  • knife
  • whisk
  • microwave

Directions

  1. Mix gelatin and water in medium microwavable bowl. Microwave on HIGH 1-1/2 min.; stir until gelatin is completely dissolved.
  2. Set aside 12 of the marshmallows.
  3. Add remaining marshmallows to gelatin; stir until well blended. Microwave on HIGH 1 min. or until marshmallows are partially melted. Stir with wire whisk until marshmallows are completely melted.
  4. Pour into 9-in. square pan sprayed with cooking spray.
  5. Refrigerate 45 min. or until set. Run sharp knife around edges of pan to loosen gelatin layer from pan. Starting at one short end, roll up gelatin layer tightly.
  6. Cut into 12 (3/4-inch-thick) strips. Refrigerate, covered, until ready to decorate.
  7. Unroll each about 1 inch. Stand 1 of the reserved marshmallows on unrolled portion of each spiral for the "snail's body," securing with frosting. Insert 2 pieces of licorice into each marshmallow for "antennae," securing with additional frosting, if desired.
