  • cup celery chopped
  • 0.3 cup flour all-purpose
  • 0.5 cup bell pepper green chopped
  • 0.5 cup chicken broth low-sodium
  • teaspoons old bay seasoning 
  • tablespoons olive oil divided
  • servings panko-crusted grits patties 
  • 1.3 pounds pork loin chops boneless
  • 0.5 cup bell pepper red chopped
  • 0.3 tsp pepper dried red crushed
  • 0.3 teaspoon salt 
  • 1.5 teaspoons or dried fresh chopped
  • 0.8 teaspoon or dried fresh chopped
  • 0.8 teaspoon or dried fresh chopped

Directions

  1. Prepare Panko-Crusted Grits Patties; keep warm.
  2. Trim fat from pork chops, and cut pork crosswise into thin strips.
  3. Combine flour and Old Bay seasoning; dredge pork in flour mixture.
  4. Cook half of pork in 2 Tbsp. hot oil in a large skillet over medium-high heat 3 minutes on each side or until browned.
  5. Repeat procedure with 1 Tbsp. oil and remaining pork.
  6. Remove pork from skillet.
  7. Saut celery and bell peppers in remaining 1 Tbsp. oil in skillet 30 seconds.
  8. Add mushrooms, and saut 2 minutes.
  9. Add tomatoes and next 5 ingredients; cook over medium heat 5 minutes.
  10. Add pork; cover, reduce heat, and simmer 5 minutes.
  11. Serve over Panko-Crusted Grits Patties.
