Ingredients

  • 0.3 cup butter 
  • cups chicken broth divided
  • 0.3 cup flour all-purpose
  • 25 servings reserved pan drippings from herb-roasted turkey

Directions

  1. Pour pan drippings through a wire-mesh strainer into a large measuring cup, discarding solids.
  2. Add broth to equal 3 cups.
  3. Melt butter in a saucepan over medium heat; whisk in flour, and cook, whisking constantly, 10 to 12 minutes or until smooth and light brown. (
  4. Mixture should be the color of peanut butter.) Gradually whisk in drippings mixture. Bring to a boil, whisking constantly. Reduce heat to medium-low; simmer, stirring occasionally, 5 minutes or until thickened.
  5. Add up to 1/2 cup broth for desired consistency.
  6. Add salt and pepper to taste.
