Ingredients

  • 12 ounces edamame fresh shelled
  • 0.5 cup cilantro leaves fresh packed roughly chopped
  • 0.5 cup yogurt plain
  •  avocado pitted peeled roughly chopped
  • 0.5 cup water 
  • 0.3 cup juice of lemon 
  • teaspoons salt 
  •  shakes of tabasco to taste (less )
  • drops sesame oil dark to taste (more )

Directions

  1. Cook the edamame: Bring 2 quarts of well salted water (2 tablespoons salt) to a boil.
  2. Add the shelled edamame. Return to a simmer and cook for 5 minutes, or until cooked through and tender.
  3. Drain with cold water.
  4. Blend the edamame with the remaining ingredients:
  5. Place drained cooked edamame in a food processor. Pulse several times.
  6. Add the chopped cilantro. Pulse again.
  7. Add the remaining ingredients, and pulse until well puréed.
  8. Add more water if you want a smoother consistency. Adjust seasonings (salt, Tabasco, lime, sesame oil).
  9. Serve with pita, chips, crostini, or a vegetable platter.
