Ingredients
- 10 ounce pkt spinach frozen thawed drained chopped
- 1 teaspoon garlic minced
- 0.3 cup milk 1%
- 0.3 cup onion diced
- 0.5 teaspoon pepper
- 0.5 teaspoon salt to taste
- 0.7 cup cheddar cheese shredded
- 0.5 cup swiss cheese shredded
- 8 ounce spicy tofu
- 1 9-inch unbaked pie crust

- Preheat oven to 350 degrees F (175 degrees C).
- In a blender, combine tofu and milk; process until smooth, adding more milk if necessary. Blend in salt and pepper.
- In a medium bowl, combine spinach, garlic, onion, Cheddar cheese, Swiss cheese and tofu mixture.
- Mix well, and pour into prepared pie crust.
- Bake in preheated oven for 30 minutes, or until set and golden brown on top.
- Let stand 5 minutes before cutting.
