  • 0.5 cup chicken broth dry white
  • medium eggplant diced peeled
  •  garlic cloves minced
  •  bell pepper diced green
  • teaspoon hot sauce 
  • large onion diced
  • 0.5 teaspoon pepper 
  •  plum tomatoes peeled seeded chopped
  • teaspoon salt 
  • 0.3 cup vegetable oil 
  • teaspoon worcestershire sauce

Directions

  1. Saute first 3 ingredients in hot oil in a large skillet over medium-high heat 5 minutes; add eggplant, and saute 10 minutes or until tender. Stir in tomato and remaining ingredients. Cook, stirring occasionally, 5 minutes or until liquid is absorbed.
  2. Serve warm, or chill up to 1 week.
  3. Serve with crackers or toasted pita bread triangles.
