Ingredients

  • 14.5 ounce canned tomatoes diced undrained canned
  • 0.5 teaspoon thyme dried
  • large eggs lightly beaten
  •  garlic clove minced
  • 0.8 cup bell pepper green chopped
  • 0.3 teaspoon ground pepper red
  • teaspoon olive oil 
  • 0.8 cup bell pepper red chopped
  • 0.3 teaspoon salt

Directions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add bell peppers and garlic; saut 5 minutes.
  3. Add thyme, salt, ground red pepper, and tomatoes; cover, reduce heat to medium, and cook 7 minutes or until bell peppers are tender. Uncover, and cook 1 minute or until liquid almost evaporates. Gently stir in eggs; cover, and cook 3 minutes or until set.
  4. Garnish with parsley, if desired.
  5. Cut into wedges.
