Directions

  1. Gently pull husks away from corn (do notdetach from cob); remove silk. Pull husksup over corn to cover kernels. Secure huskstightly with string or a strip of foil. Soak in alarge pot of room-temperature water for atleast 15 minutes and up to 1 hour.
  2. Meanwhile, remove grill grate and builda hot fire in a charcoal grill, allowing fireto burn down until coals are completelycovered with ash (or use the ash-coveredcoals remaining after grilling a main course).
  3. Push coals to one side of grill. Arrange3 ears of corn in a single layer on clearedside of grill; cover corn with coals. Repeaton the other side with remaining coals andcorn, spreading coals evenly over corn.Roast corn until most of the kernels aredeep golden brown, about 10 minutes (somekernels will be flecked with dark brownspots).
  4. Remove husks; use a pastry brush toflick off any ashes.
  5. Serve with butter and salt.
