  • 0.8 pound belgian endive separated
  • 0.3 teaspoon pepper black freshly ground
  • tablespoon olive oil extravirgin
  • cups apples i use 2 granny smith apples sliced ( 2 large)
  • 0.3 teaspoon salt 
  • tablespoons shallots finely chopped
  • tablespoons walnuts toasted chopped

Directions

  1. Combine first 5 ingredients in a large bowl, stirring with a whisk.
  2. Add apple and endive; toss gently to coat.
  3. Sprinkle with nuts.
