  • servings caesar dressing 
  • tablespoon cornmeal 
  • pound extra-firm tofu light drained cut into 1/2-inch cubes
  • teaspoon oregano dried
  • 16 cups romaine lettuce sliced
  • tablespoon tamari sauce

Directions

  1. Combine cornmeal and oregano; stir well.
  2. Combine tofu and tamari in a bowl; toss gently to coat.
  3. Sprinkle cornmeal mixture over tofu; toss gently to coat.
  4. Coat a large nonstick skillet with cooking spray, and place over medium heat until hot.
  5. Add tofu; cook 3 minutes or until lightly browned, turning occasionally.
  6. Remove tofu from skillet; set aside.
  7. Place lettuce in a bowl.
  8. Drizzle 3/4 cup Caesar Dressing over lettuce; toss well. Spoon 2 cups salad into each of 5 bowls; top each with 1/2 cup tofu croutons.
  9. Serve immediately.
  10. Note: Store remaining dressing in an airtight container in refrigerator for 1 week.
  11. Serve with salad greens.
