Ingredients

  • tablespoon dijon mustard 
  • large eggs lightly beaten
  • 0.5 teaspoon hot sauce 
  • pound lump crab meat fresh drained
  • 0.5 cup mayonnaise 
  • cup saltines crushed ( 20 crackers)
  • quart vegetable oil 
  • tablespoon worcestershire sauce 

Equipment

  • frying pan
  • baking sheet
  • paper towels
  • wax paper

Directions

  1. Stir together first 5 ingredients; fold in crabmeat and saltines.
  2. Let stand 3 minutes.
  3. Shape mixture into 8 patties.
  4. Place on a wax paper-lined baking sheet; cover and chill 1 hour.
  5. Fry crab cakes, in batches, in hot oil in a large skillet over medium-high heat 3 to 4 minutes on each side or until golden.
  6. Drain on paper towels.
  7. Serve with tartar sauce, if desired.
  8. Note: To saut crab cakes, cook in 3 tablespoons butter or oil in a large nonstick skillet 3 to 4 minutes on each side or until golden.
