  • 0.5 teaspoon cinnamon 
  • cups lightly frisée packed
  • 0.1 teaspoon ground cloves 
  • 0.5 teaspoon ground ginger 
  • tablespoons roasted hazelnut oil divided
  • 0.3 tsp kosher salt and pepper 
  • 0.1 teaspoon nutmeg 
  • 0.3 cup orange juice 
  • teaspoon orange zest 
  •  tart-sweet apple such as jonathan thinly sliced
  • 0.8 cup walnut halves

Directions

  1. Preheat oven to 35
  2. Put walnuts in a pie pan. In another pie pan, toss bread with 1 tbsp. oil.
  3. Bake walnuts and bread, stirring occasionally, until walnuts are golden and croutons are golden and crisp, 12 to 15 minutes.
  4. Let cool. Coarsely chop nuts.
  5. Whisk remaining 3 tbsp. oil, the zest, orange juice, spices, and 1/4 tsp. each salt and pepper in a large bowl. Toss gently with lettuce, frise, apple, nuts, and croutons.
  6. Add more salt and pepper to taste if you like.
