Ingredients
- 1 leaves bean sprouts thinly sliced
- 1.3 pound beef eye round thick sliced
- 1 "-4" cinnamon stick
- 1 piece x1" ginger peeled
- 4 garlic cloves crushed
- 2 packages ramen instant (preferably not fried; noodles only)
- 4 servings kosher salt
- 2.5 cups low-salt beef broth
- 2 cups mushrooms mixed stemmed thinly sliced (such as oyster or shiitake)
- 0.5 small onion
- 1 scallion thinly sliced
- 1 teaspoon vegetable oil
- 1 star anise whole

- Heat oil in a medium pot over medium heat.
- Add onion, cut side down, garlic, and ginger.Cook, stirring occasionally, until garlic isgolden, 3-4 minutes.
- Add 1 1/2 cups water,broth, star anise, and cinnamon; bring toa boil. Reduce heat; simmer until flavorsmeld, 7–8 minutes.
- Add mushrooms; simmer2 minutes.
- Add scallion. Season with salt.
- Meanwhile, boil ramen until tender butstill firm to bite.
- Drain; divide among bowls.
- Add beef slices to soup; simmer until justcooked through, about 20 seconds. Usingtongs, transfer beef to bowls.
- Discard ginger, garlic, star anise, andcinnamon; ladle broth into bowls.
- Garnishwith bean sprouts, basil, and sliced chiles.
