  • piece x1" ginger peeled

  • packages ramen instant (preferably not fried; noodles only)
  • servings kosher salt 
  • 2.5 cups low-salt beef broth 
  • cups mushrooms mixed stemmed thinly sliced (such as oyster or shiitake)
  • 0.5 small onion 
  •  scallion thinly sliced
  • teaspoon vegetable oil 
  •  star anise whole

Directions

  1. Heat oil in a medium pot over medium heat.
  2. Add onion, cut side down, garlic, and ginger.Cook, stirring occasionally, until garlic isgolden, 3-4 minutes.
  3. Add 1 1/2 cups water,broth, star anise, and cinnamon; bring toa boil. Reduce heat; simmer until flavorsmeld, 7–8 minutes.
  4. Add mushrooms; simmer2 minutes.
  5. Add scallion. Season with salt.
  6. Meanwhile, boil ramen until tender butstill firm to bite.
  7. Drain; divide among bowls.
  8. Add beef slices to soup; simmer until justcooked through, about 20 seconds. Usingtongs, transfer beef to bowls.
  9. Discard ginger, garlic, star anise, andcinnamon; ladle broth into bowls.
  10. Garnishwith bean sprouts, basil, and sliced chiles.
