Ingredients

  • ounces fettuccine barilla uncooked
  • 0.5 pound chicken breast boneless for stir-fry
  • 0.3 teaspoon salt 
  • 1.5 cups green beans whole frozen
  • cup orange juice 
  • tablespoon cornstarch 
  • tablespoon orange marmalade 
  • 0.3 cup cherries dried
  • 0.3 cup walnut pieces chopped

Directions

  1. Cook and drain fettuccine as directed on package.
  2. While fettuccine is cooking, spray 12-inch nonstick skillet with cooking spray; heat over medium heat. Cook chicken and salt in skillet 2 to 3 minutes, stirring occasionally, until chicken is brown. Stir in frozen green beans. Cover and cook over medium heat 3 to 4 minutes, stirring occasionally, until beans are crisp-tender.
  3. Mix orange juice and cornstarch until smooth. Stir orange juice mixture, marmalade and cherries into chicken mixture.
  4. Heat to boiling, stirring constantly; reduce heat to medium. Cover and cook 2 to 3 minutes, stirring occasionally, until beans are tender and chicken is no longer pink in center.
  5. Add fettuccine to chicken mixture; toss.
  6. Sprinkle each serving with walnuts.
