Ingredients

  • teaspoons chipotles in adobo canned (from chipotle peppers)
  • 28 ounce canned tomatoes diced undrained canned
  • teaspoon chipotles in adobo canned chopped
  • 0.5 cup corn whole frozen
  • 0.3 cup cilantro leaves fresh chopped
  •  garlic clove minced
  • 0.5  jalapeno minced seeded
  • tablespoons juice of lime 
  • large onion thinly sliced
  • 0.3 teaspoon salt 
  • tablespoons vegetable oil

Directions

  1. Saute onion and garlic in hot oil in a large saucepan over medium-high heat 5 minutes or until tender.
  2. Add tomatoes and next 3 ingredients. Bring to a boil. Reduce heat to medium-low; cook, covered, 10 minutes, stirring occasionally.
  3. Process 1 cup tomato mixture in blender until smooth, stopping to scrape down sides; return to saucepan.
  4. Stir in corn and salt; cook 3 minutes or until thoroughly heated. Stir in cilantro and lime juice.
  5. Serve with blue corn chips.
  6. NOTE: Spice flavor increases when chilled overnight.
