Ingredients

  • 0.5 pound cabbage green shredded
  • 0.5 pound cabbage red shredded
  • large carrots shredded
  • rib celery diagonally sliced
  • tablespoons cider vinegar 
  • medium cucumber peeled seeded diagonally sliced
  • medium size bell pepper green cut into thin strips
  •  green onions sliced
  • 0.3 cup juice of lime fresh
  • tablespoons olive oil 
  • tablespoon pepper sauce hot (liquid from peppers in vinegar)
  • medium size bell pepper red cut into thin strips
  • teaspoon salt 
  • tablespoons sugar 
  • small onion white thinly sliced

Directions

  1. Combine first 9 ingredients in a bowl.
  2. Stir together lime juice and next 4 ingredients in a small bowl until sugar is dissolved.
  3. Pour dressing over cabbage mixture, tossing to coat.
  4. Let stand 30 minutes, tossing often.
  5. Drizzle evenly with olive oil, tossing to coat, just before serving.
  6. *1 (16-ounce) package coleslaw mix may be substituted for shredded green and red cabbage.
