Ingredients

  •  avocado 
  • 30 oz black beans drained and rinsed canned
  • cup cherry tomatoes halved
  • cups brown rice cold cooked
  • tablespoon cilantro leaves fresh chopped
  • cup corn kernels fresh frozen thawed cooked
  • teaspoon ground cumin 
  • 0.3 cup juice of lime fresh (4 limes)
  • tablespoons olive oil 
  •  bell pepper diced red seeded
  • tablespoons roasted tomato salsa 
  • 0.5 teaspoon salt 
  •  scallions thinly sliced

Directions

  1. In a small bowl, stir together lime juice, oil, salsa, cumin and salt. In a large bowl, stir together rice and corn, breaking up any rice clumps.
  2. Pour lime-juice mixture over rice mixture and stir well to coat.
  3. Add beans, bell pepper, tomatoes and scallions, and toss gently to combine.
  4. Just before serving, pit, peel and dice avocado, and stir gently into salad.
  5. Sprinkle with cilantro, if desired, and serve.
