  • 0.5 teaspoon pepper black divided freshly ground
  • teaspoons butter 
  • cup wine 
  • 16 ounce filet mignon steaks 
  • cup less-sodium beef broth fat-free
  • teaspoons soya sauce low-sodium
  • tablespoon red wine vinegar 
  • 0.5 teaspoon salt divided
  • 0.3 cup shallots minced

Directions

  1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  2. Sprinkle both sides of steaks evenly with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  3. Add steaks to pan; cook 3 minutes on each side or until desired degree of doneness.
  4. Remove from pan.
  5. Add shallots to pan; saut 1 minute. Stir in vinegar and soy sauce, scraping pan to loosen browned bits; cook 1 minute or until liquid evaporates, stirring constantly.
  6. Add remaining 1/4 teaspoon salt, remaining 1/4 teaspoon pepper, wine, and broth; bring to a boil. Cook until reduced to 1/2 cup (about 11 minutes).
  7. Remove from heat; stir in butter.
  8. Serve with steaks.
