  • Tbsp grey poupon harvest coarse ground mustard 
  • Tbsp cooking sherry dry
  • lb beef filet mignon steaks 
  • 0.3 tsp ground pepper black
  • tsp onions finely chopped
  • tsp vegetable oil; peanut oil preferred 
  • 0.3 cup whipping cream

Directions

  1. Season steaks with pepper.
  2. Heat oil in large skillet on high heat.
  3. Add steaks; cook 2 to 3 min. on each side or until evenly browned on both sides. Cook 3 to 4 min. on medium heat or until steaks are medium doneness (160F), turning occasionally.
  4. Remove steaks from skillet; cover to keep warm. Discard drippings from skillet.
  5. Add onions to skillet; cook and stir 1 min.
  6. Add sherry; cook 1 min., stirring constantly to loosen browned bits from bottom of skillet. Stir in cream and mustard; cook 5 min. or until thickened, stirring constantly.
  7. Serve steaks topped with the cream sauce.
