  • 0.5 teaspoon pepper black
  • tablespoon butter 
  •  garlic cloves minced
  • 0.3 cup green onions chopped
  • ounces crawfish tail meat cooked
  • 0.3 cup mushrooms finely chopped
  • 1.5 teaspoons oregano fresh chopped
  • tablespoons parmesan cheese fresh grated
  • 0.3 cup part-skim ricotta cheese 
  • 0.5 teaspoon salt 
  • 24 ounce chicken breast halves boneless skinless
  • cup pkt spinach chopped

Directions

  1. Preheat oven to 35
  2. Combine first 10 ingredients in a medium bowl.
  3. Cut a horizontal slit through thickest portion of each breast half to form a pocket. Stuff 1/3 cup crawfish mixture into each pocket.
  4. Melt butter in a large nonstick skillet over medium-high heat.
  5. Add chicken; cook 4 minutes on each side or until browned. Wrap handle of pan with foil; bake at 350 for 35 minutes or until chicken is done.
