Ingredients

  • 0.5 teaspoon pepper black freshly ground
  • teaspoons butter 
  • 0.5 teaspoon basil dried
  • 16 ounce carton egg substitute 
  • ounces feta cheese crumbled
  • cups hash brown potatoes shredded frozen
  • 0.3 teaspoon oregano dried
  • ounce roasted bell peppers red drained sliced
  • 0.3 teaspoon salt 
  • 10 ounce pkt spinach frozen dry thawed drained chopped
  • cups vidalia sweet thinly sliced
  • tablespoons water 

Equipment

  • frying pan
  • aluminum foil
  • broiler

Directions

  1. Combine the first 7 ingredients in a medium bowl; set aside.
  2. Melt butter in a 10-inch cast-iron or nonstick skillet over medium heat.
  3. Add onion; saut 5 minutes.
  4. Add potatoes; cook 9 minutes or until lightly browned, stirring occasionally.
  5. Pour egg mixture over onion mixture. Arrange bell pepper slices on top of frittata. Cook 7 minutes or until set.
  6. Sprinkle with cheese. Wrap handle of pan with foil.
  7. Preheat broiler.
  8. Broil 5 minutes or until cheese is lightly browned.
  9. Cut into 4 wedges.
