  • 1.5 teaspoon double-acting baking powder 
  • 2.5 cup blanched almonds and 
  • large eggs 
  • large naval oranges 
  • servings powdered sugar for tipping
  • pinch salt 
  • 1.5 cup sugar

Directions

  1. PRE-HEAT OVEN TO 375
  2. GREASE AND FLOUR 10 INCH SPRING FORM CAKE PAN
  3. IN FOOD PROCESSOR GRIND TOGETHER ALMONDS AND SUGAR UNTIL THE ALMONDS ARE STILL A BIT CRUNCHY
  4. BOIL THE THREE ORANGES WHOLE FOR 30 MINUTES THEN LET COOL AND QUARTERREMOVE SKIN FROM FLESH AND PUREE COMPLETELY INCLUDING SKIN IN FOOD PROCESSOR
  5. BEAT THE EGGS UNTIL THEY ARE FLUFFY AND LIGHT IN COLOR
  6. ADD THE SALT, BAKING POWDER AND ALMOND EXTRACT TO THE ALMOND/SUGAR MIXTURE THEN FOLD THE PUREED ORANGE MIXTURE THEN FOLD THE EGGS INTO IT
  7. POUR ENTIRE MIXTURE INTO THE SPRING FORM PAN
  8. BAKE ONE HOUR1
  9. LET COOL THEN SPRINKLE WITH POWDERED SUGAR
