  • kg new potatoes evenly sized 
  • 25 butter 
  • 100 ml vegetable stock 
  • tbsp olive oil 
  • servings thyme sprigs

Directions

  1. Heat oven to 190C/170C fan/gas
  2. Peel the potatoes and pat dry with kitchen paper.
  3. Heat the oil and butter in a flameproof dish, add the potatoes and brown all over. This will take about 5 mins.
  4. Season well, add the thyme sprigs and stock, and bring to the boil.
  5. Transfer the dish to the oven, uncovered.
  6. Cook for 25-30 mins until the potatoes are tender.
