  • servings garnish: fennel sprigs fresh
  • 12 ounces duck foie gras very cold cut into six 1/4-inch-thick slices
  • tablespoon rosemary fresh minced
  • tablespoons olive oil 
  • large pears cored ripe cut into 6 wedges
  • 0.1 teaspoon pepper freshly ground
  • 0.3 teaspoon pepper freshly ground
  • cups gourmet salad greens mixed
  • 0.1 teaspoon salt 
  • 0.3 teaspoon salt

Directions

  1. Toss pears, rosemary, salt, and pepper with olive oil.
  2. Place pears on a baking sheet.
  3. Bake at 475 for 6 to 8 minutes or until slightly firm.
  4. Toss greens with 1 tablespoon extra virgin olive oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Arrange greens on six individual plates.
  5. Heat a 10-inch cast-iron skillet over high heat.
  6. Add foie gras; cook in batches 45 seconds. Turn, and cook 30 more seconds or until golden brown and slightly crisp.
  7. Arrange 3 pear wedges on side of greens. Top each with a fois gras slice.
  8. Garnish, if desired.
  9. Serve immediately.
