  • teaspoon pepper black freshly ground
  • 15.5 ounce .5 can cannellini beans rinsed drained canned
  • teaspoon dijon mustard 
  • cups fennel bulb sliced ( 1 medium)
  • ounces feta cheese crumbled
  • 0.8 cup flat-leaf parsley fresh chopped
  •  garlic cloves chopped
  • 0.5 teaspoon kosher salt 
  • tablespoons olive oil extra-virgin
  • cup olives pitted ripe halved
  • teaspoon oregano dried
  •  plum tomatoes quartered
  • 1.5 cups onion red thinly sliced
  • tablespoons red wine vinegar 
  • tablespoons sunflower seeds 
  • tablespoons water

Directions

  1. To prepare vinaigrette, combine first 7 ingredients in a small bowl. Gradually add oil, stirring with a whisk until blended.
  2. To prepare salad, combine fennel and the next 6 ingredients (through tomatoes) in a large bowl.
  3. Drizzle vinaigrette over salad, tossing until well combined.
  4. Sprinkle with sunflower seeds. Cover and chill at least 1 hour.
