Ingredients

  • tablespoon olive oil extra virgin 
  • 0.5 cup onion chopped
  • cups peas fresh shelled
  • 0.8 cup water 
  • tablespoons tahini 
  • tablespoons mint leaves fresh chopped (spearmint)
  • tablespoons cup heavy whipping cream sour
  • 0.5 teaspoon pepper black
  • servings salt to taste

Directions

  1. Heat the olive oil in a small pot over medium heat.
  2. Add the chopped onion and sauté until soft and translucent, but not browned, about 4-5 minutes.
  3. Add the peas and the water, cover and bring to a boil.
  4. Let this cook 5 minutes, then drain the peas and onions.
  5. Purée in food processor:
  6. Put the peas and onions into the bowl of a food processor and add all the remaining ingredients. Pulse until you have a rough purée.
  7. Serve chilled.
