  •  bay leaves 
  • cups pea-mond dressing fresh
  • tablespoon apple cider vinegar 
  • 0.3 teaspoon ground mustard dry
  • tablespoons parsley fresh chopped
  • 0.3 teaspoon garlic minced
  • 0.5 teaspoon ground cumin 
  • 0.3 teaspoon ground pepper red
  • teaspoons jalapeno minced seeded
  • teaspoons olive oil 
  • 0.5 cup onion diced
  • cup onion chopped
  • 0.5 teaspoon paprika smoked spanish
  • cup bell pepper diced red
  • 0.3 teaspoon salt 
  • 0.5 teaspoon sugar 
  • 2.5 cups vegetable stock organic

Directions

  1. To prepare relish, combine first 8 ingredients in a bowl. Cover and chill.
  2. To prepare peas, sort and wash peas; set aside.
  3. Heat oil in a medium saucepan over medium-high heat.
  4. Add 1 cup onion and garlic to pan; saut 5 minutes. Stir in peas, broth, and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until peas are tender. Discard bay leaf.
  5. Serve with relish.
