  • 0.3 teaspoon pepper black
  • tablespoons capers drained
  • ounces cherry tomatoes quartered
  • tablespoon cider vinegar 
  • 0.1 teaspoon pepper red crushed
  • 0.8 teaspoon basil dried
  •  garlic clove minced
  • 1.5 teaspoons olive oil extra-virgin
  • 0.3 teaspoon salt 
  • 16 ounce chicken breast halves boneless skinless
  • 0.5 cup bell pepper yellow finely chopped

Directions

  1. Preheat broiler.
  2. Combine first 8 ingredients in a bowl; cover and chill until ready to serve.
  3. Place chicken on a broiler pan coated with cooking spray; sprinkle with salt and black pepper. Broil 5 minutes on each side or until done.
  4. Serve tomato mixture over chicken.
