Ingredients

  • cups asparagus sliced (1-inch) ()
  • ounce baby spinach fresh
  • 0.3 teaspoon pepper black freshly ground
  • ounce rainbow five-cheese tortelloni fresh (such as Monterey Pasta Company)
  •  garlic cloves minced
  • teaspoons juice of lemon fresh
  • teaspoons olive oil 
  • tablespoons parmesan cheese fresh shaved
  • tablespoons pinenuts toasted
  • 0.3 teaspoon salt

Directions

  1. Prepare tortelloni according to package directions, omitting salt and fat.
  2. Add asparagus during last 3 minutes of cooking.
  3. Drain pasta and asparagus; rinse with cold water.
  4. While pasta cooks, heat oil in a large nonstick skillet over medium heat.
  5. Add garlic; saut 1 minute.
  6. Add spinach, salt, and pepper; cook 2 minutes or until spinach wilts.
  7. Combine pasta mixture and spinach mixture in a large bowl.
  8. Add lemon juice; toss gently to coat. Top servings evenly with cheese and nuts.
