Ingredients

  • 0.3 cup olive oil extra virgin extra-virgin
  • tablespoons juice of lime 
  • 0.7 cup cilantro leaves finely chopped
  • 0.3 teaspoon salt 
  • 0.3 teaspoon pepper freshly ground
  • teaspoon olive oil extra virgin extra-virgin
  • clove garlic finely chopped
  • 0.7 cup mayonnaise 
  • 0.3 cup greek yogurt plain
  • 0.3 cup jalapeno seeded finely chopped
  • inch bamboo skewers 
  • cups cherry tomatoes 
  • large bell pepper yellow cut into 1-inch squares
  •  cucumber english seedless sliced ()
  • lb monterrey jack cheese cut into 1-inch cubes
  • leaves cilantro leaves

Directions

  1. In large bowl, mix Marinade ingredients.
  2. Add tomatoes, bell pepper, cucumber and cheese. Cover and refrigerate about 30 minutes.
  3. Meanwhile, make Jalapeño Aioli. In 6-inch skillet, heat 1 teaspoon oil over medium-high heat until hot. Cook garlic in oil about 1 minute. In small bowl, mix garlic, mayonnaise, yogurt and jalapeño chile. Refrigerate until ready to serve.
  4. Drain vegetables, reserving marinade mixture. Thread skewers alternately with tomato, bell pepper, cucumber and cheese; top with cilantro leaf.
  5. Serve with reserved marinade and aioli.
