Ingredients

  • 2.5 teaspoons double-acting baking powder 
  • teaspoon pepper black freshly ground
  • 30 ounce catfish filets 
  • 0.5 teaspoon ground pepper 
  • tablespoons flour all-purpose
  • teaspoon garlic powder 
  • tablespoons kosher salt divided
  • tablespoons hot sauce hot
  • cups vegetable oil ()
  • 1.5 cups cornmeal white

Directions

  1. Whisk 3 tablespoons salt, hot pepper sauce, and8 cups hot water in a large bowl until saltdissolves. Chill in freezer until cold, about30 minutes.
  2. Place catfish in brine, cover,and refrigerate for 3 hours.
  3. Whisk cornmeal, next 5 ingredients, andremaining 3/4 teaspoon salt in a medium bowl.Attach deep-fry thermometer to the side ofa 10" cast-iron skillet or other large heavyskillet.
  4. Add oil to come a little less thanhalfway up side of skillet.
  5. Heat over mediumheat until thermometer reads 335°F.
  6. Rinse catfish; pat dry. Dredge catfishin cornmeal mixture, shaking off excess.Working with 2 fillets at a time, fry catfish,turning halfway through, until goldenbrown and crispy, 10–12 minutes per batch.
  7. Transfer fish to paper towels to drain.
