Ingredients

  • teaspoons pepper black freshly ground
  • 24 oz catfish filets 
  • large eggs 
  • 1.5 cups flour all-purpose
  • servings pasilla peppers 
  • 2.3 teaspoons salt 
  • servings vegetable oil 
  • 1.5 cups cornmeal plain yellow

  • dutch oven

Directions

  1. Combine flour and 1 tsp. each salt and pepper in a shallow dish.
  2. Whisk together eggs and 2 Tbsp. water in another dish.
  3. Combine cornmeal, 1 tsp. salt, and remaining 1 tsp. pepper in a third dish.
  4. Sprinkle catfish with remaining 1/4 tsp. salt. Dredge fillets, 1 at a time, in flour mixture, shaking off excess; dip in egg mixture, and dredge in cornmeal mixture, shaking off excess.
  5. Place on a wire rack in a jelly-roll pan.
  6. Pour oil to depth of 2 inches in a cast-iron Dutch oven.
  7. Heat over medium-high heat to 35
  8. Fry fillets, 2 at a time, in hot oil 6 minutes or until done.
  9. Drain on a wire rack over paper towels.
  10. Serve with Pickled Peppers.
