Ingredients

  • servings garnish: chives fresh chopped
  • 0.5 cup cracker meal 
  • 1.5 cups flour all-purpose
  • servings kosher salt 
  •  to 8 oysters in the shell 
  • servings vegetable oil; peanut oil preferred 
  • servings pearl tartar sauce

  • dutch oven

Directions

  1. Shuck oysters, reserving liquor; clean and reserve shells.
  2. Place oysters and liquor in a bowl; cover and chill until ready to fry.
  3. Pour oil to depth of 2 inches into a Dutch oven; heat to 35
  4. Combine flour and cracker meal in a large pie plate.
  5. Drain oysters; dredge in flour mixture. Fry oysters, in small batches, 5 minutes or until golden.
  6. Drain on paper towels; sprinkle with kosher salt.
  7. Arrange reserved shells on a platter.
  8. Place a dollop of Pearl Tartar Sauce in center of each shell. Top with a fried oyster.
  9. Garnish, if desired.
